White Chocolate, Cranberry & Pecan Bars

So so simple, and mouthwateringly  yummy!

BASE
150g plain flour
40g icing sugar
120g unsalted butter, room temperature

TOPPING
100g white chocolate, roughly chopped
75g dried cranberries
150ml unsweetened condensed milk
75g desiccated coconut
50g pecan halves

* Preheat oven to 170 degrees, (gas mark 3) and line 20cm x 20cm baking tray with baking parchment
* Add all of the base ingredients into your mixer, mixing together until a dough forms
* Press the dough into the prepared baking tray, making a slight lip around the edge.  Place in the oven and bake for about 20

minutes, or until the edges are golden and the middle is cooked
* In a large bowl, mix together all the ingredients for the topping, then spread evening over the prepared base.  Place back in the oven and cook for 25 minutes until topping is set and light brown.  Allow to cool and then EAT!
